Ingredients

  • 300 g flour
  • 100 g sugar
  • 2 tbsp cocoa powder
  • 1 egg
  • 200 g butter
  • flour (for the work surface)
  • 200 g dark chocolate couverture
  • 40 ml rum
  • 100 g coconut flakes

Instructions

    Mix the flour, sugar and cocoa together, sift onto a work surface, create a well in the center, crack the egg into it and distribute the butter pieces around the well. Using a knife, roughly chop all ingredients into crumbs and quickly knead with your hands into a smooth dough. Shape into a ball and wrap in cling film; refrigerate for 30 minutes.

    Meanwhile, roughly chop the chocolate and melt over a hot but not boiling water bath. Stir in the rum, remove from heat and let cool slightly. Remove the cookies from the oven, allow them to cool on a kitchen rack and coat with the chocolate. Sprinkle coconut flakes and let dry.

    Preheat the oven to 180 °C (356 °F) with upper and lower heat. Roll out the dough to 1 cm thickness on a floured surface and cut circles with a 4 cm diameter cutter. Place on a baking sheet lined with parchment paper and bake in the preheated oven for 10–12 minutes.
