Colorful Easter Egg Cookies

Ingredients

  • organic lemon
  • 300 g flour (and a little extra for the work surface)
  • 1 pinch salt
  • 100 g sugar
  • 1 egg
  • 200 g yogurt butter
  • 250 g powdered sugar
  • Food coloring (e.g., green, blue, yellow, red)

Instructions

    Wash half a lemon hot, pat dry, grate the zest, and squeeze out the juice.

    Mix flour with salt, sugar, and 1 tsp lemon zest; mound on a work surface. Create a well in the center, add the egg, and scatter butter chunks around the well. Roughly chop with a large knife and knead by hand into a smooth dough. Form into a ball, wrap in plastic wrap, and refrigerate for 30 minutes.

    Roll dough to 1/2 cm thickness on a floured surface and cut out various sized eggs. Place on parchment-lined baking sheets and bake sequentially in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for about 10 minutes. Remove, lift from the sheet, and cool on a wire rack.

    Whisk powdered sugar with 2 tbsp lemon juice to make a thick glaze, color with different food dyes. Decorate eggs with glaze and let dry.
