  • 80 g Butter
  • 90 g sugar
  • 30 g flour
  • 60 g ground almond kernels
  • 1 untreated lemon (zest and juice)
  • 3 egg whites
  • powdered sugar (for dusting)

Instructions

    Preheat the oven to 200°C fan.

    Melt the butter and let it cool slightly. In a bowl mix the sugar, flour, ground almonds, and zest. Lightly beat the egg whites and combine with the dry ingredients. Stir in the butter and lemon juice, then spread the dough onto a silicone boat-shaped mat. Bake for 10-15 minutes. Remove, allow to cool, release from the molds, and dust with powdered sugar before serving.
