Frozen Jelly with Berries

Ingredients
- 250 g sugar
- 4 sheets red gelatin
- 500 g red blackberries (for about 300 ml fruit juice)
- 20 ml Cassis
- 2 tbsp lemon juice
- 1 Egg white
- 4 raspberry stems for garnish

Bring 300 ml water with the sugar to a boil in a pot and simmer until the sugar dissolves. Remove from heat and let cool. Soak the gelatin in cold water.

Wash the blackberries, strip them from the stems, finely puree and strain through a sieve (should yield about 300 ml fruit juice).

Squeeze out excess water from the gelatin and warm it gently with the cassis in a pot until dissolved. Stir in 2 tbsp of the fruit juice and add the remaining juice. Mix with the sugar and lemon juice, pour into four plastic-lined molds, and place in the freezer for about 4 hours. In the meantime whisk the egg white to stiff peaks and fold it into the mixture halfway through freezing.

Dip the frozen jelly briefly in hot water, plate on a dish, remove the molds and the foil, and serve each cup garnished with a raspberry stem.
