Ingredients

  • 500 ml milk
  • 2 packets vanilla sugar
  • 200 g dark chocolate
  • 2 egg yolks
  • 70 g sugar
  • 30 g cornstarch
  • 2 egg whites
  • 100 ml whipping cream
  • 100 g whipping cream
  • 1 tbsp powdered sugar
  • 2 tbsp coconut liqueur
  • chocolate shavings
  • raspberries
  • Kumquats

Instructions

    Bring milk and vanilla sugar to a boil, remove from heat, let steep for 15-20 minutes. Melt chocolate with 3 tbsp hot milk and add to the vanilla milk. Whisk egg yolks with sugar until fluffy, fold in melted chocolate, cornstarch, and vanilla milk. With moderate heat whisk the mixture continuously into a ribbon (do not boil). Beat egg whites stiffly and fold into the still-hot pudding mixture. Let the cream cool, whip cream stiffly and fold into the pudding. Pour pudding into dessert cups and refrigerate. Whip cream with powdered sugar stiffly and fold in liqueur.
