Raspberry Purée with Whipped Cream

A delightful dessert featuring a smooth raspberry purée topped with airy whipped cream and garnished with fresh raspberries from Spoonsparrow.

Ingredients

  • 300 g frozen raspberries
  • Cinnamon liqueur (to taste)
  • 300 g whipping cream
  • 2 packs of cream stabilizer
  • 2 packs vanilla sugar
  • fresh raspberries (for garnish)

Instructions

    Allow the frozen raspberries to thaw and gently heat them in a small saucepan, then finely purée. Season the purée with cinnamon liqueur to taste.

    Whip the cream with the stabilizer and vanilla sugar until very stiff, then fill a piping bag fitted with a star tip. Spoon the raspberry purée into glasses, top each with a dollop of whipped cream, and garnish with fresh raspberries before serving.
