Chocolate Pancakes with Pear Filling

Ingredients

  • 200 g Flour
  • 1 tsp Baking powder
  • Salt
  • milk
  • 3 eggs (size M)
  • 100 g dark chocolate
  • 2 pears
  • pear juice
  • pith of 1 vanilla bean
  • 1 tbsp pear essence
  • 2 tbsp vanilla pudding mix
  • 80 g Butter

Instructions

    First wash the pears for the filling, quarter them, remove the core and cut into thin slices. Boil the pear juice with the vanilla pith and pear essence. Whisk the pudding mix with 2 tbsp cold water until smooth and stir it into the boiling liquid using a whisk. Bring to a boil again and add the pear slices. Cover and let steep for 15 minutes, then cool.

    Combine all ingredients (except the chocolate) for the batter. Let rest for 15 minutes.

    Finely chop the chocolate, place in a metal bowl and melt over a double boiler. Stir into the batter.

    Melt 10 g butter in a small pan, pour 1/8 of the batter and cook each side for 3-4 minutes on low heat. Keep warm and repeat to make eight pancakes. Spread pear compote on the warm pancakes and fold them together.
