- 300 g puff pastry (frozen)
- 2 ripe pears
- 300 ml elderberry juice
- 200 g Roquefort cheese
- 250 g quark
- Salt
- Pepper (freshly ground)
- nutmeg

Let the frozen puff pastry sheets thaw while lying side by side. Peel the pears, cut them lengthwise into halves and remove the cores. Place the pear halves in a pot and pour over the elderberry juice; if the pears are not fully covered, top up with water. Bring to a boil and simmer for 5 minutes on low heat, covered. Remove the pears and let them drain. Slice the pear halves fan‑shaped, keeping them attached at the stem base.

Crush the Roquefort with a fork, mix in the quark, and season with salt, pepper and nutmeg.
