Creamy Mustard Ice Cream with Glazed Pear Slices

Sweet and spicy, pear and mustard, the perfect summer combination for an extraordinary dessert experience.
Ingredients
- 600 ml pear juice (alternatively apple juice)
- juice of one lemon
- 180 g sugar
- 3 egg yolks
- 200 g cold butter cubes
- 2 tbsp Maille au Miel (Dijon mustard with honey)
- 2 ripe pears (preferably Williams Christ)
- Lemon juice
- 1 tbsp sugar
- 1 tsp butter
- 20 ml pear brandy
- a few sprigs of lemon balm
Instructions

Heat the fruit and lemon juice with the sugar to 80°C (do not boil!). Pour into a blender, gradually add the egg yolks, then the cold butter cubes.

Season with Maille au Miel and continue blending on low speed until the mixture is chilled. Freeze in an ice cream maker.

Peel, core, and quarter the pears. Boil a little lemon juice with sugar and butter, add the pear slices to glaze: finish with pear brandy for depth of flavor.

Serve the ice cream together with the glazed pear slices in a glass and garnish with lemon balm.
