Chocolate mousse with vanilla sauce

Ingredients
- 150 g dark chocolate
- 150 g milk chocolate
- 20 ml orange liqueur
- 5 eggs
- 3 tbsp vanilla sugar
- 125 g chilled whipping cream
- 50 g sugar
- orange slice (for garnish)
- 250 ml milk
- 250 ml Whipping Cream
- 1 Vanilla bean
- 5 egg yolks
- 100 g sugar
Instructions

Whisk the milk and cream with the vanilla bean and scraped seed, then bring to a boil.

Beat the egg yolks with the sugar in a bowl until creamy. Stir the hot cream-milk into the yolk mixture, pour everything back into the pot and whisk over low heat to thicken into a sauce without boiling.

Strain the vanilla sauce through a sieve, let it cool while dusting the surface lightly with sugar to prevent skin formation.

Coarsely chop the chocolate and melt it together with the orange liqueur in a double boiler. Remove from heat.

Separate the eggs; beat the yolks with the vanilla sugar until frothy, until the sugar dissolves.

Whip the chilled cream stiffly.

Beat the egg whites with the sugar into stiff peaks.

Add the yolk mixture to the chocolate and fold in with a whisk. Spoon the whipped cream onto the chocolate mixture and quickly fold it in before the mass sets.

Fold in the meringue gently.

Seal the bowl tightly with plastic wrap and refrigerate for at least 3 hours.

For serving, use a tablespoon to scoop mousse into dessert plates, drizzle vanilla sauce over it, and garnish with orange slices.
