Chocolate Ice Cream with Flavored Orange Fillets

Ingredients
- 125 ml milk
- 2 fresh egg yolks
- 1 vanilla bean (pulp)
- 40 g sugar
- 100 g dark chocolate (chopped)
- 100 g whipping cream
- 40 ml brown rum
- 1 tbsp cocoa powder (dark)
- 40 ml orange liqueur
- 20 ml rum
- 3 oranges (filleted)
- 50 g whipping cream (stiffly whipped)

Instructions

Pour the milk and rum into a pot and bring to a boil once. Whisk the egg yolks with the vanilla pulp until frothy, gradually sprinkling in the sugar. While whisking, pour the hot milk in a thin stream into the egg mixture. Heat the custard over a double boiler while stirring until it thickens slightly, then remove from heat—do not let it boil!

Melt the chocolate with 3 tbsp cream over the double boiler while stirring, then mix with cocoa and fold into the custard. Chill in the refrigerator for about an hour or whisk over a cold water bath.

Lightly whip the remaining cream and fold into the chocolate mixture. Pour everything into an ice‑cream maker to churn, or place in a metal bowl and freeze for about 3 hours, stirring vigorously every 30 minutes.

Meanwhile marinate the orange fillets with liqueur and rum and let them soak.

Use an ice scoop to form balls, arrange on small bowls with the orange fillets, top with a splash of cream, and garnish with waffle pieces and chocolate shavings before serving.
