Ingredients

  • 250 ml milk
  • 3 fresh egg yolks
  • 1 vanilla bean (the extracted seed)
  • 75 g sugar
  • 300 g dark chocolate
  • 200 g whipping cream
  • 1 tsp cocoa powder
  • chocolate (for garnish)

Instructions

    Heat the milk in a pot and bring to a brief boil. Whisk the egg yolks with the vanilla seed until frothy, gradually adding the sugar. Pour the hot milk into the yolk mixture while constantly stirring with a whisk. Return the mixture to the pot and heat again, stirring, until it thickens slightly—do not let it boil. Remove from heat.

    Melt half of the chocolate with 3 tbsp cream in a double boiler while stirring; immediately mix in cocoa powder and stir into the egg milk until fully dissolved. Let cool, then refrigerate for 1 hour. Finely chop the remaining chocolate. Lightly whip the rest of the cream and fold in the chocolate shards with the chocolate milk. Finish everything in an ice cream maker. Serve in cones or bowls, garnished with chocolate if desired.
