Chocolate Cream

- 100 g dark chocolate (80% cocoa content)
- 1 Vanilla bean
- 4 tbsp sugar
- 5 egg yolks
- 150 ml whipping cream
- 200 ml milk
- powdered sugar (for dusting)

Preheat oven to 150°C. Split the vanilla bean lengthwise and, with chocolate, milk and cream, bring to a simmer while stirring. Puree so that the chocolate evenly blends with the milk mixture. Let it cool slightly, then remove the vanilla bean. Whisk the egg yolks with sugar until pale and frothy; slowly pour the liquid in a thin stream into the yolk mixture while whisking. Pour the batter into 4–6 ramekins and place them in a baking dish. Add boiling water to the dish up to half the height of the ramekins.

Bake for 25 minutes. Then cool for 2 hours, dust heavily with powdered sugar, and briefly caramelize under the oven’s hot convection grill (270°C) or with a torch before serving.
