Chocolate Mousse with Cherries

- 200 g dark chocolate
- 2 Eggs
- 50 g sugar
- 20 ml rum
- 150 ml whipping cream
- 250 g cherries
- 1 tsp Cornstarch
- 100 ml cherry juice
- Chocolate shavings (for garnish)

Coarsely chop the chocolate and melt it over a hot water bath, then remove from heat. Separate the eggs; beat the whites with sugar into stiff peaks. Beat the yolks with rum over the hot water bath until creamy, then remove from heat. Whip the cream to stiff peaks. Add the melted chocolate to the yolk mixture and fold in with a whisk. Chill in a cold water bath. Fold the whipped cream onto the chocolate mixture quickly. Gently fold in the meringue and pour the mousse into small glasses. Refrigerate for at least 3 hours.

Wash and pit the cherries. Whisk the cornstarch with 1–2 tbsp cherry juice until smooth. Boil the remaining cherry juice with the cherries, stir in the cornstarch, and cook for 1–2 minutes. Remove from heat and let cool.

Before serving, distribute the cherries over the mousse and garnish with chocolate shavings.
