Gingerbread with Sugar Glaze

Ingredients

  • 200 g honey
  • 50 g Brown sugar
  • 75 g butter
  • 1 egg yolk
  • 1 tbsp cocoa powder
  • 1 lemon zest
  • 2 tsp gingerbread spice
  • 2 tsp potash
  • 2 tbsp rum
  • 300 g flour
  • 100 g almond sticks
  • 50 g finely chopped candied orange peel
  • 50 g Raisins
  • 130 g powdered sugar
  • 3 tbsp Lemon juice

Instructions

    Heat honey, brown sugar and butter in a saucepan. Stir until the sugar dissolves. Let cool. Mix egg yolk, cocoa, lemon zest and gingerbread spice into the mixture. Whisk potash with rum until smooth and add.

    Whisk flour with almond sticks, candied orange peel and raisins. Knead all ingredients into a firm dough. Dust work surface with flour. Roll dough to 1 cm thickness. Cut round gingerbread cookies about 8 cm diameter. Preheat oven to 180°C. Prepare baking sheet.

    Place gingerbread on the sheet. Bake for 20 minutes. For glaze, whisk powdered sugar with lemon juice until smooth. Brush cooled gingerbread with glaze and decorate with candied cherries and almond sticks.
