  • 50 g hazelnuts (chopped)
  • 50 g candied lemon peel (chopped)
  • 50 g candied orange peel (chopped)
  • 7 tbsp apricot jam
  • 1 egg
  • 35 whole blanched almonds (halved)

Instructions

  1. 1.

Mix flour, sugar, baking powder, lemon zest and gingerbread spice mix.

  2. 2.

Warm honey slightly, whisk with the eggs and add to the flour mixture; knead well.

  3. 3.

    Soak raisins in rum.

  4. 4.

Combine filling ingredients, stir in raisins.

  5. 5.

Divide gingerbread dough into two halves; roll each on a floured work surface to sheet size. Place one sheet on a buttered baking tray, spread 6 tbsp warm jam over it, then distribute the filling, top with the second dough sheet and press with a rolling pin.
