Filled Gingerbread

Ingredients
- 300 g flour
- 150 g sugar
- 1 tsp Baking powder
- 2 tsp grated lemon zest
- 1.5 packets gingerbread spice mix
- 75 g honey
- 2 Eggs
- 100 g raisins
- 40 ml rum
- 50 g pine nuts (chopped)
- 50 g almond sticks (chopped)
- 50 g hazelnuts (chopped)
- 50 g candied lemon peel (chopped)
- 50 g candied orange peel (chopped)
- 7 tbsp apricot jam
- 1 egg
- 35 whole blanched almonds (halved)

Mix flour, sugar, baking powder, lemon zest and gingerbread spice mix.

Warm honey slightly, whisk with the eggs and add to the flour mixture; knead well.

Soak raisins in rum.

Combine filling ingredients, stir in raisins.

Divide gingerbread dough into two halves; roll each on a floured work surface to sheet size. Place one sheet on a buttered baking tray, spread 6 tbsp warm jam over it, then distribute the filling, top with the second dough sheet and press with a rolling pin.

Brush the surface with beaten egg and bake in preheated oven at 200°C (400°F) on middle rack for about 20 minutes. Remove, cut into small squares of roughly 2.5 cm edges while warm, cool, then attach one almond half to each square with jam.
