Spiced Star-Shaped Cake

Ingredients

  • 150 g butter
  • 180 g sugar
  • 1 packet vanilla sugar
  • 1 pinch salt
  • 3 eggs
  • 1 tsp cinnamon
  • 1 tsp ginger powder
  • unprocessed lemon zest
  • 300 g flour
  • 3 tsp baking powder
  • 30 ml rum
  • 1 small grated apple
  • 75 g chopped walnuts
  • 50 g Raisins
  • 1 pack dark cake glaze
  • 30 g shredded coconut

Instructions

    Beat butter until fluffy. Add sugar, vanilla sugar and salt. Gradually stir in eggs. Mix cinnamon, ginger, lemon zest, flour and baking powder together and fold into the batter. Add rum, grated apple, walnuts and raisins and mix well.

    Fill the batter into a greased star-shaped pan and bake in a preheated oven at 225 °C for about 50 minutes. Warm the cake glaze according to package instructions in a double boiler. Remove the cake from the oven, let it cool slightly, flip it out of the pan and coat with the liquid glaze. Sprinkle shredded coconut on top.
