Chocolate Mousse

Ingredients
- 150 g dark chocolate
- 150 g milk chocolate
- 20 ml orange liqueur
- 5 eggs
- 3 tbsp vanilla sugar
- 125 g chilled whipping cream
- 50 g sugar
- 4 ripe pears
- juice of 1 lemon
- 4 tbsp sugar
- 500 ml sweet white wine
- 50 g dark couverture
Instructions

Coarsely chop the chocolate and melt it with the orange liqueur in a double boiler. Remove from heat.

Separate the eggs. Beat the yolks with vanilla sugar until frothy, until the sugar dissolves.

Whip the chilled cream to stiff peaks.

Beat the egg whites with sugar into stiff meringue.

Add the yolk mixture to the chocolate and fold in with a whisk. Spoon the whipped cream onto the chocolate mixture and quickly fold it in with the whisk before the mixture sets.

Gently fold in the meringue.

Seal the bowl tightly with plastic wrap and refrigerate for at least 3 hours.

Wash, peel, and drizzle the pears with lemon juice.

Dissolve sugar in a little water and simmer gently for 5 minutes. Add wine and pears and steam covered for about 15 minutes until soft.

Remove the pears from the liquid and cut into slices.

Reduce the wine liquid to a syrupy consistency and drizzle over the pears before serving.

Melt finely chopped couverture in a double boiler. Fill a piping bag with a small round tip and pipe the melted chocolate onto parchment paper as desired, then let it set.

For serving, use a spoon to scoop mousse onto dessert plates with pear slices and decorative chocolate strands.
