Chocolate Mousse

Ingredients
- 150 g dark chocolate
- 150 g milk chocolate
- 1 small cup strong espresso
- 5 eggs
- 3 tbsp vanilla sugar
- 125 g chilled whipping cream
- 50 g sugar
- chocolate shavings
- whipped cream
- cocoa powder
Instructions

Coarsely chop the chocolate and melt it with the espresso in a double boiler. Remove from heat.

Separate the eggs. Beat the yolks with the vanilla sugar over the hot water bath until fluffy, until the sugar has dissolved.

Whip the chilled cream to stiff peaks.

Beat the egg whites with the sugar into stiff meringue.

Add the yolk mixture to the chocolate and fold in with a whisk. Spoon the whipped cream onto the chocolate mixture and quickly fold in with the whisk before it sets.

Fold in the meringue gently.

Fill dessert glasses and cover for at least 3 hours in the refrigerator.

Serve garnished with whipped cream, chocolate shavings, and cocoa powder.
