Chocolate Mousse

Ingredients
- 150 g dark chocolate
- 150 g milk chocolate
- 1 tsp strong espresso
- 5 eggs
- 3 tbsp vanilla sugar
- 125 g chilled whipping cream
- 50 g sugar
- 8 ladyfingers
- 8 tbsp chocolate liqueur
- 3 tbsp chocolate shavings
- 150 g whipped cream
- 8 meringues (for garnish)
Instructions

Coarsely chop the chocolate and melt it with the espresso in a double boiler. Remove from heat.

Separate the eggs. Beat the yolks with vanilla sugar until fluffy, until the sugar dissolves. Whip the chilled cream to stiff peaks.

Beat the egg whites with sugar into stiff meringue.

Add the yolk mixture to the chocolate and whisk with a spatula. Spoon the whipped cream onto the chocolate mixture and quickly fold in with a spatula before it sets.

Fold in the meringue gently. Crumble the ladyfingers into dessert glasses, soak them with chocolate syrup. Fill the mousse over the ladyfingers and cover for at least 3 hours in the fridge.

Serve garnished with whipped cream, chocolate shavings and meringue cookies.
