Madeleines

Ingredients
- 125 g flour
- 1 packet baking powder
- 1 tsp bicarbonate of soda
- 2 Eggs
- 50 g sugar
- 1 packet vanilla sugar
- 4 Tbsp sunflower oil
- 2 tbsp Sour cream
- 1 tsp gingerbread spice
- butter (for the pan)

- powdered sugar (for dusting)

Preheat the oven to 180 °C (top/bottom heat). Grease the depressions of the Madeleine tin with butter and dust with flour. In a bowl, carefully mix flour, baking powder, and bicarbonate of soda. Beat the eggs and whisk them. Add sugar, vanilla sugar, oil, gingerbread spice, and sour cream to the dry mixture and quickly stir in the eggs until the batter is thick enough to fall from a spoon.

Fill the tin depressions with batter. Bake in the preheated oven on the middle rack for about 15–20 minutes (test with a toothpick). Remove, let cool in the pan for a few minutes, then release and allow to cool completely. Dust with powdered sugar before serving.
