Almond Cookies

Ingredients

  • 250 g flour
  • 100 g peeled, ground almonds
  • 50 g starch
  • 0.5 tsp Baking powder
  • 150 g sugar
  • 250 g cold butter
  • 4 drops bitter almond aroma
  • 20 peeled whole almonds

Instructions

    Mix the flour with the ground almonds, starch, baking powder and sugar. Form a mound on a work surface. Cut the butter into pieces and place around it. Add the bitter almond oil and use a large knife to cut the butter into the dough until it becomes crumbly. Then quickly knead everything by hand into a dry dough. If needed add 1 tbsp water. Shape into a ball, wrap in cling film and chill in the refrigerator for at least half an hour.

    Preheat the oven to 180°C fan. Line baking trays with parchment paper.

    After chilling, divide the dough into 20-25 pieces, quickly shape small balls with your hands (the dough should not be too warm), and place them on the tray spaced apart. Press a whole almond into each center and bake in the preheated oven for 10-15 minutes. Cool on a rack and store airtight.
