Chocolate Ice Cream with Fruit Sauce

Ingredients
- 300 ml freshly squeezed orange juice
- 140 g sugar
- 1 Organic Orange
- 50 ml orange liqueur
- 250 ml milk
- 3 fresh egg yolks
- 1 vanilla bean (scraped seeds)
- 75 g sugar
- 125 g dark chocolate
- 200 g whipping cream
- 1 heaping teaspoon cocoa powder

Heat the milk in a saucepan and bring to a boil once. Whisk the egg yolks with vanilla seeds until frothy, gradually adding the sugar. Pour the hot milk into the yolk mixture while stirring constantly with a whisk. Return the mixture to the pan and heat again, stirring until it thickens slightly; do not let it boil. Remove from heat.

Melt the chocolate with 3 tablespoons of cream over a double boiler, stirring continuously. Immediately stir in cocoa powder and pour into the egg custard, mixing until smooth. Let cool, then refrigerate for one hour.

Lightly whip the remaining cream and fold into the chocolate custard. Pour the mixture into an ice cream maker and churn for about 30 minutes.

For the orange sauce, rinse the orange hot, peel very thinly, and cut into fine strips.

Boil orange juice with sugar and orange strips for 3–4 minutes, then stir in orange liqueur and let cool.

Serve by scooping the ice cream onto plates, drizzling with orange sauce, and garnishing with lemon leaves as desired.
