Chocolate Parfait

Ingredients

  • 75 g sugar
  • 5 egg yolks
  • 2 tbsp cocoa powder
  • 4 tbsp chocolate liqueur
  • 250 ml Whipping Cream
  • 0.5 tsp chili powder
  • nutmeg
  • 400 g raspberries
  • 2 tbsp powdered sugar

Instructions

    Whisk 100 ml water with sugar and egg yolks in a bowl using the whisk of an electric hand mixer over a hot water bath until creamy and thick.

    Stir cocoa powder with chocolate liqueur until smooth, then fold into the mixture. Cool it in a cold water bath. Whip cream to stiff peaks and fold in, seasoning well with chili and nutmeg.

    Fill the mixture into molds and cover; freeze for 6 hours.

    For the raspberry sauce, boil raspberries with powdered sugar and 4 tbsp water, simmer for several minutes, then strain through a sieve and let cool.

    To serve, briefly dip the molds in hot water, release the parfaits onto small plates, top with raspberry sauce, and garnish with 2–3 fresh raspberries.
