Vanilla Ice Cream with Chocolate

Ingredients
- 0.5 l milk
- 0.25 l heavy cream
- 1 Vanilla bean
- 7 egg yolks
- 200 g sugar
- 100 g couverture chocolate

Slice the vanilla bean lengthwise, scrape out the seeds and stir them with the vanilla pod into the milk-cream mixture and bring to a boil.

Beat the egg yolks with the sugar in a bowl until creamy.

Stir the boiling milk into the egg yolk mixture, pour everything back into the pot, remove the vanilla pod and cook over low heat with a wooden spoon, stirring until the custard thickens; it must never boil again.

Strain the vanilla custard through a sieve, cool it in ice water while occasionally stirring.

Melt chopped couverture chocolate in a double boiler, let it cool slightly and mix it with about half of the vanilla ice cream mixture.

Pour the cold creams into an ice cream maker one after another and freeze until semi-firm. Then transfer the mixtures to a bowl and marinate. Freeze again in the freezer.

(If you don’t have an ice cream maker, pour each mixture into a shallow metal dish and let it freeze semi-firm in the freezer, stirring repeatedly during the first hour. Then transfer to a bowl and marinate. Freeze.)

Serve by scooping with an ice cream scoop.
