Chocolate Fruit Cake

Ingredients
- 300 g dried plums
- 300 g dried figs
- 200 g mixed dried fruit
- 200 g almonds
- 150 g Hazelnuts
- 5 eggs
- 125 g butter
- 1 tbsp honey
- 200 g spelt flour
- a pinch ground cloves
- 0.5 tsp ground ginger
- 1 tbsp cinnamon
- 100 g dark chocolate
- 20 g coconut oil

Coarsely chop the plums, figs and mixed dried fruit. Roughly chop the nuts with a knife or pulse briefly in a food processor. Separate the eggs; beat the whites with an electric mixer until stiff peaks form. Cream the butter with honey, then add the yolks and flour, mixing into a smooth batter. Fold in the fruits, nuts and spices, then gently fold in the beaten egg whites.

Line a loaf pan with parchment paper and pour in the batter. Bake in a preheated oven at 175 °C (fan: 150 °C; gas: level 2) for about 60 minutes.

Remove the cake from the oven and let it cool. Meanwhile, chop the chocolate and melt it together with coconut oil over a double boiler. Drizzle the melted chocolate over the cooled cake.
