Chocolate Foam Baked Goods

Ingredients

  • 4 egg whites
  • 1 tsp lemon juice
  • 250 g sugar
  • 1 tbsp brewed mocha (cold)
  • 200 g ground almonds
  • 1 tbsp mocha powder
  • 200 g dark couverture chocolate
  • 50 g chopped dark chocolate
  • 50 g chopped pistachios

Instructions

    Preheat the oven to 120°C fan.

    Whisk the egg whites with the lemon juice into very stiff peaks, gradually adding sugar until a firm, glossy mass forms. Fold in the brewed mocha, ground almonds and mocha powder gently.

    Fill half of the mixture into a piping bag with a serrated tip (about 4 cm diameter). Pipe small dots onto a baking sheet lined with parchment paper. Fill the remaining mixture into a round-tip piping bag and pipe small domes over the serrated dots. Bake in the preheated oven for 30-40 minutes.

    Remove from the oven and let cool. Melt the couverture chocolate and dip the foam pastries. Let them dry briefly, then sprinkle each with a little chopped couverture chocolate and pistachios. Allow to set and enjoy.
