Ingredients

  • 250 g dark chocolate couverture
  • 250 g milk chocolate couverture
  • 200 ml whipping cream
  • 2 tbsp instant coffee powder
  • 100 g Soft Butter
  • 40 ml rum
  • 400 g milk chocolate couverture
  • 80 g dark chocolate couverture
  • 40 mocha beans

    Chop both chocolates. Bring the cream with the coffee powder to a boil, remove from heat, stir in the chopped chocolate and let it melt. Whisk the butter until fluffy and mix it with the rum into the chocolate cream. Pour into a bowl and cover for at least 2 hours in the fridge.

    Then use a teaspoon to cut about 40 portions and shape them into balls. Chill again.

    Chop the milk chocolate for coating and melt about two‑thirds of it over a hot water bath. Remove from heat, stir in the remaining chocolate and let it melt. Dip the truffle pralines with a pralin fork into the chocolate and place on parchment paper to set. For decoration chop the dark chocolate and melt it as well. Let it cool slightly and fill a piping bag. Pipe lines over the pralines, add one mocha bean each, and allow to dry again.
