Chocolate Cream with Berries

Ingredients
- 100 g dark chocolate
- 200 g whipping cream (min 30% fat)
- 125 ml red wine
- 1 cinnamon stick
- 1 tbsp Cornstarch
- 2 packets vanilla sugar
- 75 g raspberries
- 75 g small strawberries
- 75 g sour cherries
- 50 g Blueberries
- Chocolate shavings (for garnish)

Coarsely chop the chocolate, heat the cream and melt the chocolate into it. Let the chocolate‑cream cool, then refrigerate overnight. Boil the wine with the cinnamon stick; mix the cornstarch with vanilla sugar and whisk in 2–3 tbsp water. Stir this into the boiling wine, thicken while stirring, remove from heat, let cool, then discard the cinnamon stick. Wash and halve large berries if needed; pit and halve cherries. Add cherries and berries to the warm wine‑gelatin mixture and chill for at least 2 hours.

Whip the well‑cooled chocolate cream until stiff peaks form and layer it with the fruit‑wine gelatin in glasses. Garnish with chocolate shavings.
