  • 250 g dark chocolate
  • 250 g butter
  • 4 eggs
  • 300 g powdered sugar
  • 200 g wheat flour
  • 2 passion fruits
  • 250 g whole milk chocolate
  • 50 g whipping cream
  • 1 handful frozen raspberries

    Melt the chocolate over a double boiler, then fold in the cold butter pieces. Whisk the eggs with powdered sugar until fluffy. Halve the passion fruits and scrape out the pulp and seeds; strain through a sieve and add to the chocolate mixture, stirring well. Pour the egg mixture into the chocolate blend, sift flour over it, and fold everything together.

    Pour the batter into a springform pan lined with parchment paper and bake in a preheated oven at 175 °C for about 30–40 minutes. While the cake bakes, melt additional chocolate. Remove the cake from the oven and cool on a wire rack. Halve another passion fruit, scrape out the pulp, and stir it into the melted chocolate along with the whipping cream; let the mixture cool slightly before spreading over the cooled cake. Let the frosting set firmly, then release the cake from the pan and transfer to a serving platter. For garnish, halve the remaining passion fruits again, spoon out the pulp, drizzle over the glaze, top with raspberries, cut into pieces, and serve.
