Chocolate Cake

Ingredients

  • 200 g chocolate (70% cocoa content)
  • 200 g butter
  • 4 eggs
  • 200 g sugar
  • 100 g flour
  • powdered sugar (for dusting)
  • raspberries (for garnish)

Instructions

    Preheat the oven to 210°C. Grease a 30 cm diameter baking pan.

    Melt the chocolate over a double boiler, remove from heat and stir in cold butter pieces until creamy.

    Separate the eggs. Beat egg whites to stiff peaks. Whisk yolks with sugar until pale and fluffy. Gently fold into the cooled chocolate-butter mixture.

    Fold in the beaten egg whites. Sift flour over the batter and gently fold again.

    Pour the batter into the pan and bake on the middle rack for 20-30 minutes. Let cool in the pan, then turn out onto a plate and dust with powdered sugar and garnish with fresh raspberries before serving.
