Simple Apple Cake with Pudding
A simple apple cake with pudding that is especially delightful! The pudding is cooked with white wine and apple juice – worth trying out!
Ingredients
- 250 g flour
- 125 g butter
- 1 egg yolk
- 1 tsp sugar
- 1 pinch salt
- butter (for the pan)
- dried legumes (for blind baking)
- 1 packet vanilla pudding powder for cooking (for 500 ml)
- 200 ml dry white wine
- 150 ml apple juice
- 3 tbsp sugar
- 1 Tbsp vanilla sugar
- 800 g apples
- 1 Egg white
- 3 tbsp apple jelly

Sift the flour onto a work surface. Press a depression in the middle. Add butter pieces, egg yolk, sugar, salt and 2 tbsp cold water. Quickly mix into dough. Form dough into a ball and wrap in foil; chill for 30 minutes.

Preheat oven to 180°C fan.

Roll out dough on a floured surface and line the greased pan with it, pulling up the edges. Prick the bottom with a fork several times, lay parchment paper over it and scatter dried legumes on top. Blind bake in preheated oven for 10-12 minutes.

For the topping prepare pudding powder according to package, but use wine, apple juice, sugar and vanilla sugar; set aside and cool. Peel apples, quarter them and remove cores. Cut two-thirds into small pieces, the rest into thin slivers. Fold apple pieces with stiffly beaten egg white into the pudding mixture and spread over the pre-baked base. Arrange apple slivers fan‑shaped on top of the pudding layer. Bake in oven for about 40 more minutes until golden brown. Brush warm tart with apple jelly and let cool before cutting.
