Chocolate Almond Cookies

Quick cookies: Chocolate almond cookies are perfect for gifting, bringing along, and snacking.

Ingredients

  • 1 Vanilla bean
  • 250 g blanched almonds
  • 250 g dark chocolate couverture
  • 10 g coconut oil

Instructions

    Split the vanilla bean lengthwise, scrape out the seeds with a knife. Toast the almonds in a dry pan until lightly browned, let cool and mix with the vanilla seeds.

    Meanwhile, chop the chocolate and melt it with coconut oil over a double boiler. Stir in the almonds. Scoop small amounts onto parchment paper using a teaspoon, forming little heaps, and allow to set.
