Vegan Nut Cookies

Ingredients
- 200 g brown sugar
- 250 g vegan margarine
- 100 g almond milk
- 4 drops bitter almond flavoring
- 150 g oat flakes
- 200 g fine whole wheat flour
- 1 tsp Baking powder
- 250 g walnut kernels
Instructions

Add the sugar and margarine to a pot and melt over low heat until the sugar dissolves. Add almond milk and almond flavoring and stir. Mix in the oat flakes, flour, and baking powder, stirring into the mixture. Remove from heat and let cool slightly.

Preheat the oven to 170°C fan and line two baking trays with parchment paper.

Chop the walnuts finely and fold them into the dough. Using two teaspoons, drop small spoonfuls onto the trays and bake in the oven for about 12 minutes until golden brown.

Transfer the cookies from the tray onto a cooling rack using the parchment and let cool completely.
