Ingredients
- 200 g dark chocolate (at least 70% cocoa content)
- 200 g butter
- 4 eggs
- 175 g raw cane sugar
- 100 g wheat flour type 1050

Melt the chocolate over a double boiler, remove from heat and fold in cold butter pieces until creamy. Separate the eggs. Beat the egg whites to stiff peaks, beat the yolks with sugar until the mixture turns white‑creamy. Gently fold this into the cooled chocolate‑butter mixture. Fold in the beaten egg whites. Sift flour over the batter and gently fold it in.
