Nut Cookies (Eggless)

Ingredients
- 250 g vegan margarine
- 200 g cane sugar
- 150 g rolled oats
- 200 g Flour
- 1 pinch cinnamon
- 1 tsp Weinstein baking powder
- 100 ml Soy drink (Soy milk)
- 250 g mixed nuts (e.g., almonds, pistachios, pecans, cashews)
Instructions

Melt the margarine with the sugar in a pot over low heat until the sugar dissolves. Meanwhile mix the oats with the flour, cinnamon and baking powder. Stir the soy drink into the butter-sugar mixture. Gradually fold in the dry mixture. Remove from heat and let it cool slightly.

Preheat the oven to 160 °C fan (convection).

Chop the nuts. Fold them into the dough and drop teaspoon-sized mounds onto two parchment-lined baking sheets at regular intervals. Bake for about 15 minutes until lightly browned. Cool on a wire rack.
