Chili Cod Omelette

Ingredients

  • 4 eggs
  • 2 red chilies
  • 250 g cod fillet
  • 1 tbsp Lemon Juice
  • 1 tbsp Vegetable oil
  • 2 tbsp butter
  • Salt
  • Pepper
  • parsley (for garnish)

Instructions

    Wash the chilies. Cut one in half, remove seeds, wash and slice into strips; cut the other into rings.

    Rinse the cod fillet, pat dry, cut into bite-sized pieces, drizzle with lemon juice, and season with salt and pepper.

    Heat oil and butter in a large pan. Whisk the eggs, season with salt and pepper, pour into the pan. Distribute fish and chili rings over the eggs. Cover and cook on low heat until set. Season again with salt and pepper. Serve garnished with parsley and chili strips.
