Ingredients

  • 6 Eggs
  • 3 tbsp Flour
  • 2 tbsp milk
  • Pinch Salt
  • clarified butter (for frying)
  • 400 g grilled cheese (4 slices)
  • 200 g Sugar snap peas
  • 50 ml Vegetable broth
  • Salt
  • Pepper
  • 1 tbsp dark soy sauce
  • 1 tsp finely chopped mint
  • 1 tsp Olive oil
  • mint for garnish

Instructions

    Separate the eggs; beat the whites with salt into a very stiff foam. Whisk the yolks with flour and milk until smooth, let rest a few minutes. Meanwhile trim the sugar snap peas and season the cheese with salt and pepper.

    Steam the sugar snap peas in vegetable broth for about 5 minutes. In a non‑stick pan, slowly brown the grilled cheese at medium heat. Fold the egg foam into the batter and cook four golden‑brown omelettes in clarified butter in another non‑stick pan.

    Fold mint into the sugar snap peas, season with salt and pepper, let sit. Place the omelettes on warmed plates, top half with cheese and vegetables, fold together. Garnish with mint and serve immediately.
