Mushroom Omelette with Feldsalat

Ingredients

  • 250 g mixed mushrooms (e.g., button, chanterelle)
  • 2 tbsp butter
  • Salt
  • Pepper (freshly ground)
  • 6 Eggs
  • 100 ml whipping cream
  • 2 tbsp freshly chopped parsley
  • Nutmeg (freshly grated)

Instructions

    Preheat the oven to 160°C with fan and top heat.

    Clean the mushrooms and leave whole or cut into smaller pieces depending on size. Sauté in hot butter in an ovenproof pan for 2-3 minutes until golden brown. Season with salt and pepper.

    Whisk the eggs with cream and parsley. Season with salt, pepper, and nutmeg. Bake in the oven for 15-20 minutes until set.
