Ingredients

  • 8 small chicory
  • 3 tbsp olive oil
  • Sea salt
  • 2 tbsp honey
  • 1 tbsp Lemon Juice
  • 1 tbsp balsamic vinegar
  • 100 ml Vegetable broth
  • 2 tbsp red cabbage sprouts

Instructions

    Wash the chicories, cut into eighths, remove the tough core but only trim enough so the leaves stay together.

    In a pan, sear in hot oil until lightly golden brown on all sides and season with salt. Drizzle with honey, allow to caramelize, then drizzle with lemon juice and balsamic vinegar.

    Add some broth, cover, and simmer gently for about 10 minutes until tender. Plate and sprinkle with sprouts before serving.
