Ingredients
- 1 kg cardy
- Salt
- 1 tbsp Lemon Juice
- olive oil (for greasing the dish)
- 2 tbsp butter
- 2 tbsp flour
- 200 ml milk
- 200 ml heavy cream
- Pepper
- nutmeg
- 100 g grated Parmesan

Rinse the cardy stems and remove fibers (peel or strip). Cut into 10-12 cm pieces and blanch in salted water with lemon for about 5 minutes. Cool, drain well, and place in an oiled baking dish.

Preheat oven to 200°C fan.

Whisk butter and flour in a saucepan until foamy. Gradually stir in milk, simmering for about 5 minutes until thickened. Add cream, remove from heat, season with salt, pepper, and nutmeg. Pour over cardy and sprinkle with cheese. Bake in the oven for about 25 minutes until golden brown.
