Ingredients
- 1 kg red onions
- 50 g butter
- 2 tbsp honey
- 2 tbsp brown sugar
- 50 ml balsamic vinegar
- 100 ml dry red wine
- 1 star anise
- 1 tsp peppercorns
- Salt

Peel the onions, halve them and cut into strips. In a pan over medium heat, slowly sauté in butter for 15-20 minutes while stirring regularly. Stir in honey and sugar, allowing it to caramelize lightly. Deglaze with balsamic vinegar and a splash of red wine; add star anise and crushed peppercorns, then simmer for about 20 more minutes, stirring occasionally, until thickened into a confit. Add more wine as needed. Remove the star anise, season with salt, and fill the confit into jars. Seal tightly and let cool.
