Mushrooms in Oil

Ingredients
- 500 g mushrooms
- 1 untreated lemon
- 0.25 l white wine
- 0.5 bunch thyme
- 5 white peppercorns
- 1 bay leaf
- 1 tomato
- 2 Spring Onions
- 2 Garlic cloves
- 100 ml olive oil
- 0.5 bunch Basil

Clean the mushrooms and place them in a bowl. Cut a 5 cm piece from the lemon, then squeeze it out. Add wine, thyme, peppercorns to the mushrooms, mix and cover for marination. Boil tomato hot, cool quickly, peel, quarter, remove seeds and finely dice flesh. Clean spring onions, trim ends, wash and slice into thin rings.

Peel garlic and finely chop. Heat olive oil and sauté spring onions and garlic, add mushroom mixture and tomatoes, bring to a boil once. Cover and simmer on low heat for 5 minutes. Let mushrooms cool and marinate in the refrigerator for at least 5 hours. Wash basil, roughly chop and sprinkle over before serving.
