Ingredients

  • 4 large chicken thighs
  • Salt
  • Pepper (freshly ground)
  • 30 g liquid butter
  • 350 g cherry tomatoes
  • 1 yellow bell pepper
  • 300 g chorizo
  • 3 tbsp olive oil

Instructions

    Wash the chicken thighs, pat dry with paper towels, and season all sides with salt and pepper. Arrange in a baking dish and brush with butter. Bake in a preheated oven at 200 °C (Oven + fan) for 20 minutes.

    Meanwhile, wash and halve the tomatoes. Wash, halve, core, and slice the bell pepper into thin strips. Slice the chorizo. Heat olive oil in a pan, add chorizo and pepper, and sauté while turning occasionally for about 5 minutes. Mix in the tomato halves, season with pepper, and spread around the chicken thighs. Bake for an additional ~20 minutes until the chicken is cooked through (no pink juices when pierced).
