Chicken Breast with Orange Sauce

- 1 tsp butter
- 100 ml Vegetable broth
- 1 Carrot
- 1 apple
- thyme sprig
- 1 tsp thyme leaves
- 2 tbsp honey
- juice of one orange
- 1 pinch ginger powder
- Salt
- Pepper

Grease a small oven-safe dish with butter.

Wash the apple, quarter it, remove seeds and cut into strips.

Peel the carrot and cut into sticks about 5 cm long.

Place the carrot, apple and thyme sprigs in the dish and lay the washed, dried chicken breasts on top.

Mix orange juice, honey, a little salt and thyme leaves; brush half of this mixture over the meat. Pour vegetable broth into the dish and bake at 160°C for about 30 minutes on medium heat. During baking, repeatedly spoon the honey-orange sauce and meat juices over the chicken.

Remove from oven and reduce the sauce slightly if desired. Season with salt, pepper and ginger powder, then serve the chicken breast on a bed of apple-carrot.
