Chicken Vegetable Skillet

Ingredients

  • 500 g chicken breast fillet
  • 500 g mixed antipasto (e.g., oil‑pickled, jarred)
  • 200 ml vegetable broth
  • 3 tbsp Lemon juice
  • 1 tbsp finely chopped sage leaf
  • Salt
  • Pepper (freshly ground)
  • 1 packet grissini (about 100g)
  • 100 g Parma ham (sliced)

Instructions

    Cut the chicken breast across into pieces about 2 cm wide.

    Drain the antipasto in a sieve, reserve 2 tbsp of the oil. Heat this oil in a pan and sauté the chicken pieces, turning, for about 4 minutes until browned all around.

    Add lemon juice, vegetable broth, drained antipasto and sage; season with salt and pepper and simmer for another 5 minutes.

    Wrap each grissini stick with one slice of Parma ham and serve alongside the chicken skillet.
