Ingredients

  • 280 g whole wheat spaghetti
  • Salt
  • 1 clove garlic
  • 2 onions
  • 1 tbsp Olive Oil
  • 400 g chicken breast fillet
  • 1 Zucchini
  • 500 g spinach
  • 30 g parmesan (30% fat in the product)
  • 100 ml heavy cream
  • 100 ml Vegetable broth
  • 1 tsp lemon juice
  • Pepper
  • nutmeg

Instructions

    Cook spaghetti according to package instructions in boiling salted water for about 10 minutes until al dente.

    Meanwhile peel and finely chop garlic and onion. Heat oil in a pot, sauté onions and garlic over medium heat for about 3 minutes.

    Pat chicken dry and cut into small pieces. Add to the same pan and brown both sides over medium heat for about 6–8 minutes.

    Trim zucchini, wash it and spiralize into zoodles. Wash spinach and shake off excess water. Add both to the chicken in the pan and cook over low heat for about 2 minutes until the spinach wilts.

    Grate parmesan finely. Deglaze the pan with cream, vegetable broth and lemon juice, then season with parmesan, salt, pepper and freshly grated nutmeg. Fold in spaghetti and serve the chicken spinach pasta on plates.
