Game Meat Patties with Potato-Red Beet Purée

- 400 g game ragout
- 1 small tart apple
- 1 egg
- 3 tbsp oatmeal
- 1 tsp dried thyme
- 1 pinch cinnamon
- breadcrumbs (as needed)
- 2 tbsp butter
- Salt
- freshly ground pepper
- 500 g starchy potatoes
- 75 ml milk
- 25 g butter
- 300 g cooked red beetroot (pre-cooked, vacuum packed)

- Grated nutmeg

Process the game ragout through a meat grinder. Wash, peel, core and grate the apple finely. Mix the grated apple with the minced game meat and knead in the egg and oatmeal. Season with salt, pepper, thyme and cinnamon, adding breadcrumbs if necessary until a moldable mixture forms.

Shape the meat dough into four equal patties using damp hands and coat them lightly in breadcrumbs if desired. Fry the patties in butter in a pan until golden brown on all sides.

Wash the potatoes and boil them in salted water until tender. Cut the red beetroot into small pieces. Warm milk with butter, peel and mash the potatoes, then stir them into the warm milk. Add the beetroot to the potato purée and blend until smooth. Season the purée well with salt, pepper and nutmeg.

Serve the game patties together with the red-beet potato purée on a preheated plate immediately.
