Vegetable Oat Patties

Vegetable oat patties are a perfect after-work recipe – quick to make, healthy and made with fresh ingredients.

Ingredients

  • 200 g bread (from the day before)
  • 2 Eggs
  • Salt
  • Pepper (freshly ground)
  • nutmeg
  • paprika powder
  • 150 g Low-Fat Quark
  • 1 red bell pepper (finely diced)
  • 1 can of small corn kernels (well drained)
  • 3 tbsp chopped chives
  • 8 tbsp rolled oats (add more if needed)
  • oil for frying

Instructions

    Cut the bread into fine cubes. Whisk the eggs with salt, pepper, nutmeg and paprika powder. Pour over the bread and let it soak for 5–10 minutes. Knead in the quark, vegetables and chives. If the mixture is too soft, add 3–4 tbsp of oats, mix again and let it rest another 5 minutes. Shape the dough into patties (if still too wet, fold in a little more oats). Roll each patty in oats.

    Heat plenty of oil in a non‑stick pan. Fry the patties on both sides until golden brown and serve hot.
