Ingredients
- 1 Shallot
- 2 tbsp chopped parsley
- 2 tbsp chopped basil
- 400 g ground beef
- 2 tsp chopped thyme
- 2 Eggs
- 4 tbsp fine oatmeal
- Salt
- black pepper (freshly ground)
- 2 tbsp olive oil
- 250 ml vegetable broth
- 4 tbsp crème fraîche
- 1 tsp grated lemon zest

Peel and finely dice the shallot, then mix with herbs, ground beef, thyme, eggs, oatmeal, salt, and pepper to form a smooth dough. Shape small patties from the mixture. Heat oil in a pan and brown the patties on all sides until cooked through. Remove and keep warm.

Deglaze the pan with vegetable broth, stir in crème fraîche, and reduce briefly until creamy. Stir in lemon zest. Serve the juicy beef patties with sauce, accompanied by spring vegetables.
